Frank’s Wife’s Cheesecake PREHEAT OVEN TO 325’F Mix together: 2-1/2 cups graham wafer crumbs 1/4 cup sugar 1/2 cup melted butter Press mixture onto bottom and sides of spring-form pan. Save 1/4 cup of mixture for topping. Beat together: 5 egg whites to form stiff but moist peaks Add 1/4 cup sugar gradually. Beat until stiff. In a separate bowl: Cream 1 lb. cream cheese until solft. Add 5 egg yolks, one at a time. Gradually beat in: 2/3 cup sugar 1/4 cup flour 1 tsp vanilla 1 cup sour cream 3 tbsp lemon juice Fold mixture into meringue and pour into prepared pan. Sprinkle 1/4 cup reserved graham cracker crumb mixture around edge. Bake 1-1/4 hours or until top is golden.
