    CARROT-STEAK SLOWCOOKER BURRITOS
    MAKES 4 SERVINGS. HALF RECIPE FOR 2.
    1/4 cup soy sauce
    2 tbs + 1 tsp brown sugar
    1/4 cup + 2 tbs red wine vinegar
    3 tsp hot sauce
    2 cloves garlic, chopped
    1 tbs + 1 tsp grated ginger
    1 1/2 pounds steak, cut into 3 pieces
    2 each carrots and green onions
    1 tbs cornstarch
    1/2 head lettuce, torn
    4 flour tortillas
    In a slowcooker, whisk together soy sauce, 2 tbs sugar, 1/4 cup vinegar, and 2 tsp hot sauce. Stir in garlic and 1 tbs ginger, toss with beef. Cook until beef is tender 8 hours on low. MAKE CARROTS---In a bowl, whisk together remaining vinegar with 1 tsp each sugar, hot sauce, and ginger, slice carrots and green onions. Add carrots and 1/2 the green onions to bowl, let sit 10 min. In a bowl, combine cornstarch and 2 tbs water. Stir into slowcooker, turn it on high, cook until sauce thickens. *Shred beef, toss with sauce. Sprinkle with remaining green onions. Divide lettuce among tortillas, fill them with beef and carrots, then roll up like burritos. SERVE & ENJOY...
