Banana Split cheesecake Squares This is a great treat if you are looking for something different. serv es 18 2 cups crushed graham crackers (about 14 whole) 1/3 cup butter or margarine, melted 1 cup sugar, divided 3 8‑ounce packages Neufchâtel cheese, softened 1 teaspoon vanilla 3 eggs 1/2 cup mashed banana 1 cup halved strawberries 1 banana, sliced, tossed with 1 teaspoon lemon juice 1 8‑ounce can pineapple chunks, drained chopped nuts and melted semisweet baking chocolate for topping (optional) Mix crushed graham cracker crumbs, butter or margarine and 1/4 cup of the sugar. Press into bottom of 9 × 13‑inch baking pan. Mix Neufchâtel cheese, remaining 3/4 cup sugar and vanilla until well blended. Add eggs; mix until blended. Stir in mashed banana. Pour into crust. Bake at 350 degrees for 30 minutes or until center is almost set. Cool. Refrigerate at least 3 hours or overnight. To serve, top with strawberries, sliced banana and pineapple. Sprinkle with chopped nuts and drizzle with melted semisweet baking chocolate, if desired. Cut into squares. Cover and refrigerate any leftovers.
